This is definitely my kind of recipe. Quick easy and nutritious. It only takes in 1.5 minutes in the microwave. This is even better and more moist than the Almond muffin.
I did say easy, right? Stir it up in a microwaveable cereal bowl. I’m so lazy, I don’t even put it in another bowl to cook. I just stir it up and cook for 1.5 minutes.
Ingredients
1 banana mashed
1 egg
¼ cup almond flour
½ Tablespon light extra virgin olive oil
1/4 teaspoon baking soda
1/8 teaspon sea salt
1 teaspoon cinnamon
1/8 cup pecan pieces
flax seed to taste
Mash the banana well in a large cereal bowl. Mix in one egg and remaining ingredients. Then take another microwaveable cereal bowl, spray with olive oil cooking spray and pour the mixture in the bowl. Microwave for 1 minute and 30 seconds test to see if it has firmed up. It may still be a little soft on top. Do not overcook. You may want to add 10 seconds at a time. It should not take more than 2 minutes.
Add a little whipped cream cheese with stevia and cinnamon or light whipped cream if you like. I divide this in half as the whole bowl is way too much.
Makes two good size servings. 257 calories and 8 grams of protein.
